Doner Kebab

So I better add a caveate before you read the rest of this. 5% lamb mince is REALLY hard to get hold of. Actually we used 20%, therefore no longer having it syn free. However it was so much better than we would have on a Saturday night that we decided to go with it.


Ingredients
  • 500 g lean lamb mince
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried mixed herbs
  • 1 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 finely chopped onion (optional)

Instructions

  1. 1. Preheat the oven to 180 C / Gas 4.
    2. Basically you just mix all of the ingredients together as much as you can - I put it in my mixer on high speed for about three minutes to ensure it was really smooth.
    3. When you're happy that it's as smooth as it's going to get, squish it into a meatloaf type of shape and wrap tightly in foil.
    3. Bake in the oven for around 1 hour 20 minutes. Turn the loaf half way through cooking time to ensure even browning
    4. Once cooked, wrap kebab meat in foil and allow to rest for 10 minutes.
    5. I sliced it as thinly as I could and served ours in toasted pitta breads and salad.
     

    We'll definitely be having that again. It's really close to a proper donner but with the added benefit of not being greasy.

Lime and Coconut Mousse

We made this up and split it between two, so technically it's 0.75 syns, however this would easily go between three.

Ingredients
Packet of sugar free jelly (we used lime)
Two muller light yogurts (we used coconut)
Two tablespoons quark (optional)

Instructions
Make up a packed of lime sugar free jelly but with only 150ml boiling water, mix it up so that it's dissolved and then add a couple of ice cubes to cool it down. Add to two muller light coconut yogurts and two tablespoons of quark (I don't think this last bit it necessarily vital but we think it makes it a bit creamy). Blitz it up in a blender to add air bubbles, pour into bowls and cool in the fridge.

Here is another recipe from the book, however I think my husband could do better. Here's the recipe:

Corned Beef Hash

I got the inspiration for this from: http://pinchofnom.com/recipes/1-syn-corned-beef-hash-slimming-world/

"Regular corned beef would cost you around 3 Syns per 100g, but if you get Princes Lean Corned Beef it will only cost you 1.5 Syns for the same amount" - beware though that a tin is 200g so if you want a 1.5 syn meal then you need to share your tin of corned beef between two people.

I actually tweaked it a little by oven baking it rather then frying it and adding the egg separately, and we used a tin per person (it was quite a lot so you could easily share a ton of corned beef and cut down the syns).

I took some cooked cooled potatoes and roughly mashed them, then I added in the corned beef cut into chunks and a spring onions cut up quite small. Mixed it up and then put it in a cake tin, I made a dip in the middle which I cracked the egg into.
 

Then put it in the oven at 200 degrees for 30 minutes.

To get it out, I tip it onto one plate (so it's upside down) so that I can take the tin off, and then put two plates together and flip it into the second plate so that it's the right way up.
 


It was delicious! 5/5 for this recipe.

Cheesy Leeks

Here we ate our cheesy leeks with trout and boiled potatoes. We got the trout from ASDA and had it in a packet that you put straight in the oven (we love a minimum effort meal)
 

The cheesy leeks were a bit inspired. This makes two big portions

Ingredients
Two big leeks/4 small leeks
30g Cheddar, grated (Healthy A)
2tbsp Creme Fraiche - low fat/fat free (1 syn)

Method
Fry the leeks in a bit of fry light. When they're nearly ready add a tablespoon of water to steam them slightly.
Add the cheese and mix for a few seconds to melt the cheese.
Take off the heat and stir in two tablespoons of creme Fraiche.
Serve straight away.

Sunday Roast

Our attempt at a Sunday roast always factors in minimal effort.

Here we cooked a joint of pork, (just following the instructions on the packet), some veg which we chopped and put in the actifry with a few squirts of fry light, and some leeks fried in fry light.
 

We had some slimming world gravy. To be completely honest it tasted like French onion soup 2/5. I think I'll try my own next time.
 

Chocolate Pot

These are chocolate pots, which are simply quark mixed with two spoons of lite hot chocolate. They're ok, like the top of a cheesecake. They could do with a bit more flavour which I might look into a bit more but they do satisfy a craving!

 

Sausage Chips and Curry Sauce

On a Saturday night you really need a treat. Ours was always chip shop chips. We're having the same here but with a couple of tweaks.

Homemade chips: cut, soaked in water for an hour then cooked in our actifry for 45 minutes with a few sprays of frylight.
Sausages: Slimming World's own from Iceland.
 
Chip Shop Curry Sauce: Slimming World's own from Iceland.
 

I'm not sure about the sauce, my husband like it, but I like a Chinese curry and this is more of a fruity Curry. I might try and make my own next time.
 

Burger in a Bowl

This is another recipe from the slimming world book. This is a total winner! I think we'll be living on this. We love burgers and Subway salads as this is kinda inbetween the two. The sauce on it is also absolutely delicious. This made far more than we needed but we've saved it for later.
 

 

Steak and Wedges

You can't beat a bit of steak and this couldn't be simpler.

We have an breville actifry, which is aweosome. We cut the potatoes up and left them to soak in a bowl of water until we're ready (we usually aim for an hours soak). Then we put them in the actifry with a few squirts of fry light for 30 minutes and then (and this is the ingenious part) we add seasoning and then cook for 15 more minutes. They come out beautifully.

For the steak, we heat the pan, and spray the steak with fry light and some black pepper, then we just fry it for one minute on each side. Once done we add a tiny splash of water to the pan to lift the meat juices and two tablespoons of creme fraiche the either some garlic, or some black pepper, whatever you're in the mood for. At 0.5 syns for a tablespoon of low fat creme fraiche you can't go wrong!

 

Sweet Chilli Chicken

Tonight's special treat was one of the recipes from the member book - sweet chilli chicken. It was really good. We actually put in the time to strip the skin from the thighs and I think it was really worth it for the marinade to soak into the meat. Delicious!
 
 

Japanese Chick Peas

When I get home from work I am absolutely starving. I didn't really know what to have as I was new to Slimming World and we haven't been shopping yet but I figured that chick peas was a safe bet.


 

Soy Chickpeas 1/2 Syn

Indredients

1 can chickpeas
2 tbsp soy sauce
1/2 tsp honey
1/2 tsp garlic powder
1/2 tsp rice wine vinegar

Instructions

I put the chickpeas in the actifry for 8 minutes while I mixed the sauce ingredients together. After they'd cooked for eight minutes I poured the sauce all over and cooked for another 5 minutes.

They are delicious. Sticky and salty and slightly sweet. They are really fab!
